BASIC ROLL DOUGH 
3 1/2 c. all-purpose flour
1 pkg. dry yeast
1 1/4 c. milk
1/4 c. sugar
1 egg
1 tsp. salt
1/4 c. shortening

In mixing bowl, combine 1 1/2 cups flour and yeast. Heat milk, sugar, shortening and salt just until warm, stirring constantly until shortening almost melts. Add to dry ingredients. Add egg and beat at low speed with electric mixer for 1/2 minute, scraping bowl. Beat at high speed for 3 minutes. By hand, stir in remaining flour to make a soft dough. Shape into ball. Place in lightly greased bowl, turn once to grease surface. Cover and let rise in warm place until doubled, 1 1/2 to 2 hours. Punch down, turn out on floured surface, cover and let rest 10 minutes. Shape into desired rolls, cover and let rise until double (30 to 45 minutes).

Bake on greased baking sheet at 400 degrees for 10 to 12 minutes. Makes 2 to 3 dozen rolls.
