BASIC WHITE ROLL DOUGH 
1 c. milk, scalded
1/4 c. butter or shortening
2 tbsp. sugar
1 1/2 tsp. salt
1 to 1 1/2 pkgs. dry yeast
1/4 c. lukewarm water
1 egg, well beaten
3 c. sifted flour (about)

1. Scald milk, add shortening, sugar and salt. Cool to lukewarm.

2. Dissolve yeast in lukewarm water, then add to lukewarm milk mixture. Add egg and stir well.

3. Add 1 1/2 cups flour, beat until smooth, add remaining flour to make a dough that is not sticky.

4. Knead, cover, let rest about 10 minutes then knead until it has a satiny appearance. Place in a greased bowl, cover and let rise in a warm place until double in bulk.

5. Mash down and knead a bit then shape into rolls. Place them in a greased pan, brush with melted butter, cover and let rise until light (45 minutes or more).

6. Preheat oven to 425 degrees and bake 15 minutes or until golden brown. Yields about 2 dozen rolls.
