SWEET POTATO CASSEROLE 
6 sweet potatoes, cooked and sliced
1/2 c. brown sugar
5 tbsp. butter
2 oranges
1/2 c. orange juice
1/4 c. strained honey
1/4 c. fine bread crumbs

In greased casserole, arrange a layer of sliced sweet potatoes; sprinkle with 6 tablespoons brown sugar, dot with 4 tablespoons butter and cover with a layer of thinly sliced, unpeeled oranges. Repeat layers.

Over all, pour orange juice with which honey has been mixed. Combine bread crumbs with remaining 2 tablespoons brown sugar and 1 tablespoon butter and sprinkle over top. Cover casserole and bake in moderate oven (350 degrees) 30-40 minutes, removing cover last 15 minutes.
