SWEET POTATO CASSEROLE 
6 med. sweet potatoes or yams, boiled in skins
1 egg, beaten
1/2 c. heavy cream
5 tbsp. sugar
1 tsp. salt
1/2 tsp. nutmeg
1 tsp. rum extract (optional)
2 tsp. finely grated orange peel
1 tbsp. melted butter

Peel, mash, and whip sweet potatoes until smooth. Add beaten egg, heavy cream, sugar, salt, nutmeg, and rum extract. Beat until light and fluffy. Put in buttered 1 1/2 quart casserole. Sprinkle evenly with orange peel. Drizzle the melted butter on top. Place in hot oven (400 degrees) for 30 minutes, or until lightly browned. Makes 6 servings.
