SWEET POTATO PUDDING 
5 lg. baked skinned yams
2 tbsp. flour
1/2 tsp. salt
1 tsp. baking powder
1/2 c. sugar
3/4 c. milk
2 tbsp. butter
1 tsp. cinnamon
1 tsp. vanilla extract
1 egg
1/2 c. seedless raisins

Preheat oven to 350 degrees. In a 2 1/2 quart casserole, combine the 5 large baked, skinned yams, butter, milk, flour, baking powder, cinnamon, sugar, egg, vanilla extract and seedless raisins. Stir the mixture about 2 minutes. Bake in oven at 350 degrees for 25 minutes. Makes 4-5 servings.
