PINEAPPLE SWEET POTATO CASSEROLE | |
6-8 macaroons (meringue cookie) 2 oz. brandy 16 oz. can yams, drained 1/2 c. butter 15 oz. can crushed pineapple 1/3 c. orange juice 1 tbsp. orange peel, grated 1 tsp. vanilla 2 or 3 tbsp. brown sugar 1/8 tsp. nutmeg Preheat oven to 375 degrees. Soak the macaroons in brandy and set aside. Mash the yams and combine with all the other ingredients including juice form the pineapple. Add macaroons and put into baking pan. Bake for 30 minutes. This will make 6 servings. |
