MOIST APPLE CAKE 
1 c. salad oil
2 eggs
2 c. sugar
2 1/2 c. flour
1 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. maple flavoring (or vanilla)
3 c. tart apples, peeled & sliced
1 c. chopped nuts (pecans are very good)

Beat salad oil, eggs and sugar until light. Sift all dry ingredients together and add to first mixture. Stir in flavoring. Add apples and nuts. At this point, use a wooden spoon to mix with instead of mixer. Spoon into greased 9 x 13 inch pan. Bake at 350 degrees for 55 minutes. Do not underbake. Frost with powdered sugar frosting. Do not store in tightly covered container as it will tend to get soggy.
