SMOKED PORK WITH KRAUT 
1 (3 lb.) smoked boneless pork shoulder butt
1/4 c. brown sugar, firmly packed
1/2 to 3/4 tsp. caraway seeds
1 (27 oz.) can sauerkraut, drained
1 tbsp. flour
1 med. apple, pared and diced
1/4 tsp. pepper

Place flour in 14x20 inch cooking bag. Shake to coat inside. Place pork in bag. Close with twist tie. Place bag in 9x13 inch baking pan. Puncture 6 small slits in top of bag. Bake at 350 degrees for 2 hours. Remove from oven. Open bag.

Combine remaining ingredients; mix well. Spoon over and around pork. Retie bag. Bake for 40 minutes longer.
