RICE PILAF 
2 tbsp. minced onion
2 tbsp. vegetable oil
1 c. uncooked brown rice
1/4 clove garlic, crushed
2 c. chicken broth
1 (6 oz.) can sliced mushrooms
1/2 c. chopped green pepper
1 tbsp. Parmesan cheese
Salt and pepper to taste

Saute onion in oil 2-3 minutes. Add rice and garlic and cook 2-3 minutes more. Add broth and green pepper, salt and pepper, Parmesan cheese. Turn heat to low and cook covered about 40 minutes or until rice is done. Stir occasionally.
