RICE PIE 
4 egg yolks
1 sm. whole egg
1 tsp. vanilla
3 c. scalded milk
2 1/2 c. cooked rice
1 tsp. salt
1/2 c. sugar

MERINGUE:

4 egg whites
8 tbsp. sugar
1/2 tsp. cream of tartar

Beat lightly together egg yolks and small egg. Gradually add milk and other ingredients. Pour into 9 inch pastry lined pie pan and bake at 475 degrees for 10 minutes, then 350 for 20 to 30 minutes.

Use 4 egg whites for meringue topping: Beat egg whites until foamy. Gradually add sugar and cream of tartar and beat until stiff. Spread over baked pie and return to oven until meringue is nicely browned.
