RICE PIE 
CRUST:

10 tbsp. oil
4 c. flour
4 tsp. water
1 tsp. salt
2 tbsp. baking powder
6 eggs

FILLING:

2 c. uncooked rice
13 eggs
4 lbs. Ricotta cheese
2 1/2 c. sugar
Cinnamon to taste

Combine all ingredients for crust and mix thoroughly. Divide and roll to line 2 (13"x9"x2") pie pans.

Combine all ingredients for filling and mix thoroughly. Divide equally between 2 pie pans. Bake at 350 degrees for 50 minutes. Makes 2 pies.
