SPINACH-RICE PIE 
1 pkg. chopped spinach, (frozen), cooked and water squeezed out
1/2 c. rice, cooked as directed
1/4 c. milk - add 1/4 c. at end of cooking and cook until absorbed
1 onion, chopped and sauteed
1/4 c. Parmesan cheese
1 (3 oz.) pkg. cream cheese
Dash of nutmeg
Salt to taste

Heat all ingredients together. Pour into greased pie pan. Mix 1 egg and 1/2 cup sugar. Spread mixture over top of pie and sprinkle with Parmesan cheese. Bake 30 minutes at 400 degrees.
