VEGETABLE CASSEROLE 
1 (1 lb.) pkg. frozen mixed vegetables, cooked and drained
1 c. grated cheese
1 c. chopped onion
1 c. mayonnaise
1 stack Ritz crackers
1 stick butter

Mix all ingredients except the Ritz crackers and butter. Put in a casserole dish that has been sprayed with cooking spray. Crush the crackers and mix the butter into the crumbs. Spread on top of the veggie mixture. Put in preheated 350°F oven and bake about 30 minutes, until lightly browned on top.

NOTE: For a large group, you can triple this recipe, but you only use twice as much topping, which is 2 stacks of the Ritz crackers with 1 cup butter and use only 2 cups of mayonnaise in the veggie mixture when you triple other ingredients.
