MIXED VEGETABLE CASSEROLE 
1 (16 oz.) can Veg-All or 1 bag frozen soup vegetables, cooked and drained
1/2 c. mayonnaise
1 c. grated cheese
1 can water chestnuts, drained and sliced
3/4 c. chopped onion
salt and pepper to taste
1/2 pkg. Ritz crackers, crumbled fine
1/2 stick butter, melted

Mix all ingredients, except cracker crumbs and butter. Pour into a casserole dish; top with cracker crumbs. Drizzle melted butter over top.

Bake at 350°F for 30 minutes.
