ZUCCHINI BREAD 
3 eggs, beaten
1 c. oil
2 c. sugar
2 c. grated zucchini (raw)
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
2 1/2 tsp. cinnamon
1/2 c. raisins

TOPPING:

1/2 c. chopped nuts
1/2 c. brown sugar

Sift flour, sugar, salt, soda, baking powder and cinnamon. Add eggs, oil and beat well. Add zucchini and vanilla. Mix well and add raisins to batter. Pour into 2 greased loaf pans, add 1/2 cup chopped nuts and 1/2 cup brown sugar on top. Bake at 350 degrees for 1 hour.
