PINEAPPLE ZUCCHINI BREAD 
3 c. flour
1 1/2 c. sugar (can be 1/2 brown)
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 eggs
2 tsp. vanilla
2 c. zucchini, grated
1 to 1 1/2 c. crushed pineapple, drained
1 stick butter, melted
1 c. raisins (optional)
1 c. nuts, chopped (optional)

Preheat oven to 325 degrees. Grease two loaf pans. Mix dry ingredients and make well in center. Add remaining ingredients and mix well. Bake for about one hour. Check with toothpick. Cool in pans 20 to 30 minutes. Then remove from pans.
