PINEAPPLE - ZUCCHINI BREAD | |
3 eggs 1 c. oil 2 c. sugar 2 tsp. vanilla 2 c. zucchini 1 (8 1/4 oz.) can crushed pineapple 3 c. flour 2 tsp. baking soda 1 tsp. salt 1/2 tsp. baking powder 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 c. nuts Blend eggs; add next 3 ingredients and mix. Add flour, soda, salt, baking powder, and spices. Add zucchini, pineapple and nuts, mixing with a spoon. Divide batter equally between 2 5 x 9 inch loaf pans. Bake at 350 degrees for 1 hour. Cool for 10 minutes and turn out on wire rack and cool. |
