ZUCCHINI PINEAPPLE BREAD 
3 eggs
2 c. sugar
2 tsp. vanilla
3 c. flour
1 tsp. baking powder
1/2 c. raisins or dates
1 c. chopped nuts
1 tsp. baking soda
1 c. crushed well drained pineapple
1 c. olive oil
2 c. unpeeled grated zucchini
1 tsp. salt (optional)

Beat eggs until fluffy. Add sugar, vanilla and oil. Then add zucchini. Fold in dry ingredients, pineapple, raisins (dates), and nuts. Mix well. Bake in two well greased loaf pans at 325 degrees for 1 hour.
