ZUCCHINI PINEAPPLE NUT BREAD 
2 c. sugar
1 c. oil
3 eggs
2 tsp. vanilla

Beat these four ingredients until foamy. In separate bowl, mix the next ingredients:

2 c. grated zucchini
1 c. crushed pineapple, drained
1 c. nuts
1 c. dates or raisins, optional

Add zucchini mixture to sugar mixture and mix well. Add:

3 c. flour
1/2 tsp. baking powder
1 tsp. salt, optional
2 tsp. baking soda
1 tsp. nutmeg
2 tsp. cinnamon

Mix well and bake 1 hour at 350 degrees. Make 2 large and 2 small loaves.
