ZUCCHINI, PINEAPPLE NUT BREAD 
3 eggs
1 c. oil
2 c. sugar
2 tbsp. vanilla
2 c. zucchini (grated unpeeled)
1 c. crushed pineapple (drained) optional
1 c. chopped nuts
3 c. flour
1 tsp. salt
2 tsp. baking soda
1/4 tsp. baking powder
1 1/2 tsp. cinnamon

Mix together and bake at 350 degrees 1 hour or until done. Makes 2 large or 3 medium loaves.
