ZUCCHINI BREAD 
3/4 c. egg substitute
1/2 c. brown sugar
1/2 c. white sugar
1 c. Puritan oil
1 tsp. vanilla
2 c. zucchini, coarsely grated (do not peel)
2 c. flour
1 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1 c. chopped nuts

Beat eggs until frothy. Add sugar, oil, and vanilla. Beat until lemon colored. Add zucchini and dry ingredients. Add nuts. Pour into 2 greased and floured loaf pans. Bake at 350 degrees for 55-60 minutes.
