PEGGY'S HEALTHLY STUFFED BELL
PEPPERS
 
1 lb. ground beef sirloin
1 tsp. Italian seasoning
1/2 tsp. black pepper
1 (15 oz.) can tomato sauce (salt free)
1/2 cup chopped onion
1 clove garlic chopped
1 cup cooked brown rice
4 large bell peppers cut in halves and seeded
1 tsp. olive oil
1/2 cup grated Mozzarella cheese

Sauté onion and garlic until tender and set aside.

Cook meat until done. Add seasonings, tomato sauce, onion and garlic and simmer covered for 10 minutes. Stir in brown rice. Set aside to cool.

Cook peppers in boiling water with olive oil until they are tender. Drain, stuff with meat mixture, add grated cheese on top.

Spray casserole dish with olive oil. Add stuffed peppers and bake uncovered in 350°F oven until bubbly and cheese is melted.
