CANDIED CARROTS 
2 lbs. carrots, cut up
1/2 stick butter
1/2 - 3/4 c. brown sugar
2 tbsp. parsley flakes

Microwave carrots for 10 to 12 minutes in a small amount of water until tender, but not mushy. Drain water. Melt butter. To that add brown sugar and parsley flakes. Stir through carrots. Warm in microwave a few minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
