BEET CAKE 
1 c. oil
2 c. sugar
2 tsp. vanilla
4 eggs
2 c. flour
2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
2 c. grated raw beets
1 c. crushed pineapple
1 c. coconut

FROSTING:

8 oz. pkg. cream cheese
4 tbsp. butter
3 c. powdered sugar
2 tsp. vanilla

Cream together oil, sugar, and vanilla. Beat one egg at a time into batter. Sift together flour, baking powder, salt, and cinnamon; add 1/3 mixture at a time to batter. Drain pineapple. Add grated beets, pineapple, and coconut by folding into batter. Bake at 350 degrees for 45 minutes or longer in 10 x 12 inch pan.

Frosting: Combine cream cheese, butter, powdered sugar, and vanilla; frost cake.
