BEET CAKE 
3 c. flour
3 1/2 tsp. baking powder
1 tsp. salt
2/3 c. butter, room temp.
2 c. sugar
4 eggs
1 1/4 c. beets puree
1 tsp. vanilla

Sift flour, baking powder and salt. Cream butter, sugar and add eggs, 1 at a time. Stir in beets and vanilla. Stir in dry ingredients. Pour into 3 (9 inch) pans. Bake at 350 degrees for 30 minutes.

FROSTING:

1 pt. whipping cream
1/2 c. confectioners' sugar
1 tsp. vanilla

Whip together.
