PISTACHIO NUT CAKE WITH ICING | |
1 box yellow cake mix 1 box pistachio instant pudding (sm. size) 3 eggs 1/4 c. oil 1 c. club soda 1 c. chopped walnuts (save 1/4 c. walnuts for top of batter) Mix first 5 ingredients together, approximately 2 minutes in blender. Fold in walnuts. Grease tube pan and flour. Pour in batter, sprinkle with remaining walnuts, patting walnuts down slightly into batter. Bake at 350 degrees for approximately 50 to 55 minutes. Ovens vary. POOR MAN'S ICING: 5 tbsp. "Wondra Flour" 1 c. milk 1 tsp. vanilla Mix together flour and milk and heat until a paste-like consistency. COOL and then add 1 teaspoon vanilla. Mix in blender the following ingredients: 8 tbsp. Crisco Add slowly to above ingredients 3/4 cup granulated sugar. Mix well at high speed until sugar is dissolved. Add the cooled flour-milk and mix until creamy. Spread on cooled cake. Unused portion may be frozen for later use. |
