SPLIT PEA SOUP 
10 c. water
2 c. dried split peas, washed
1 onion, chopped
1 large carrot, diced
1 handful string beans, cut into 1-inch pieces
1 tbsp. salt
pepper to taste
diced zucchini and fresh peas (optional)

Combine all ingredients in a large pot with a tight fitting lid. Bring to a rolling boil and skim off any foam that rises to the surface. Cover. Simmer 2 hours. Adjust seasoning.
