RAISIN BREAD | |
2 pkg. dry yeast 1/2 c. warm water 2 c. scalded milk 1/4 c. butter 2 eggs, beaten 3 c. sifted flour 1 tsp.salt 1/2 c. sugar 1/2 tsp. nutmeg (1/4 tsp. cinnamon, optional) 4 c. flour or enough to knead 1 1/2 c. seedless raisins Dissolve yeast in water in large bowl. Heat milk and butter. Cool and add to yeast mixture. Beat eggs and add. Sift together 3 cups flour, salt, sugar and spice and add to liquid. Add remaining 4 cups flour. Add raisins last and knead. Let rise in pan until double in bulk. Punch down and put in 2 loaf pans and raise again. Bake 375 degrees for 40 - 50 minutes or until it appears to be browned and firm. |
