SPINACH & EGG SALAD 
7-9 hard cooked eggs
1 pkg. (10 oz.) chopped spinach
1 med. potato
Mayonnaise (approx. 2 tbsp.)
Onion powder to taste
Salt & pepper to taste

Cook, cool and peel eggs. Boil spinach in slight salt water on a medium flame until completely cooled. Drain well.

Peel and cut potato into small pieces (in 1/8's is fine). Boil until very soft. Drain and mash well while warm. Mash eggs. Put into bowl, add all ingredients. Mix and add more seasoning if needed.
