SPINACH, EGG & PARMESAN SALAD 
1 lb. spinach (fresh)
1 c. red onion, finely chopped
2 hard cooked eggs, chopped
1 tbsp. Dijon mustard
2 tbsp. red wine vinegar
6 tbsp. vegetable oil
1/4 c. grated (fresh) Parmesan cheese
6 to 8 slices cooked bacon
Slivered almonds (if desired, optional)
Salt & pepper

Cut spinach into bite size pieces; add red onions and egg. Put mustard and vinegar in mixing bowl. Add salt and pepper. Using a wire whisk, gradually add oil. Pour and scrape sauce over spinach mixture. Sprinkle with cheese. Toss and blend well. Add bacon bits and nuts (if desired).
