MICROWAVE CHERRY CHEESECAKE 
1/4 c. butter
12 graham crackers
2 tbsp. flour
2 tbsp. sugar

FILLING:

1 (8 oz.) pkg. cream cheese
1/3 c. sugar
1 egg
1 tsp. lemon extract

TOPPING:

1 c. sour cream
3 tbsp. sugar
1/2 tsp. almond or vanilla extract
1 (21 oz.) can cherry pie filling

Melt butter in 1 1/2 quart glass baking dish for 30 seconds. Mix in remaining crust ingredients. Press mixture on bottom and halfway up the sides of dish. Soften cream cheese (30 seconds) and beat with rest of filling ingredients, using mixer. Pour over crust and cook uncovered for 5 minutes. Combine sour cream, sugar and extract for topping. Spread over filling and cook uncovered for 2 minutes. Cool slightly. Spoon cherry pie filling on top. Chill several hours or overnight.

Since microwave ovens vary in power, you may need to adjust your cooking time.
