POOR MAN'S PASTA 
6 oz. ricotta cheese
1/2 lb. sliced ham, diced
1 pkg. frozen peas
2 tbsp. butter
1/2 pint plus heavy cream
Grated Parmesan cheese
Salt and pepper to taste
1 lb. medium shell macaroni

Place thawed peas with butter in a skillet and saute over low heat for 2 minutes and then add the ham. Cook for 5 minutes and remove from heat. In a bowl mix with ricotta cheese, heavy cream, salt, pepper and Parmesan cheese to your liking. Once the macaroni is cooked, drain the water and return to pot. Add the peas and ham mixture and toss thoroughly. Then add the ricotta - cream mixture and fold until thoroughly mixed. Warm on low heat, adding additional cream if necessary. Serves 4 persons.
