PORK CHOP & RICE DINNER 
4 (1/2" thick) lean pork chops
1/4 tsp. pepper
Vegetable cooking spray
1/4 c. diced onion
1/4 c. diced green pepper
1/2 c. uncooked regular rice
1 (28 oz.) can tomatoes, undrained & chopped
1/4 c. water
1/2 tsp. salt
1/2 tsp. prepared mustard

Trim excess fat from chops; sprinkle with pepper. Coat a large skillet with cooking spray; place over medium heat until hot. Add chops and cook until browned on both sides.

Remove chops and drain on paper towels; wipe pan drippings from skillet with a paper towel. Coat skillet with additional cooking spray. Add onion and green pepper to skillet and saute until tender. Stir in rice, tomatoes, water, salt and mustard. Add pork chops. Bring to a boil; cover, reduce heat and simmer 25 to 30 minutes or until rice is tender and chops are done.
