COCONUT CREAM PIE 
3/4 c. sugar
7 tbsp. flour (this is 1/2 c. minus 1 tbsp.)
1/4 tsp. salt
2 eggs
3 c. scalded milk, not boiling
1 tsp. vanilla
1 can coconut
Baked pie crust or graham cracker crust
Whipped cream

Mix sugar, flour, salt and eggs together. Slowly add the scalded milk, stirring constantly. Return the mixture to low heat and stir constantly until it begins to boil. Continue to stir and cook 2 to 3 minutes or until thick. Remove from heat and add vanilla. Cool to room temperature. Fold in coconut. Pour into pie shell. Top with whipped cream.
