SWISS STEAK 
2 lbs. round steak (well-pounded or use cube steak)
1/2 c. flour
Salt and pepper to taste
2 tbsp. shortening (or oil)
1 diced onion
1 c. diced celery
1 diced green pepper
1 c. tomato soup
1/4-1/2 c. water

Cut meat into serving pieces. Mix flour, salt and pepper in a shallow dish. Dip meat pieces in flour mix and then sear it in heated shortening (or oil). Brown on both sides.

Add onion, celery, pepper, tomato soup and water. Place in oven. Cover and cook until tender (350 degrees) about 30 minutes. Remove cover and continue to cook until "gravy" has proper consistency (another 15-20 minutes).
