10 Amarrretti cookies 1 c. butter, room temperature 1 c. granulated sugar 5 eggs, separated 1/4 c. all-purpose flour 4 oz. semi-sweet chocolate chips (frozen) Preheat oven to 350 degrees. Grease and flour 9-inch round cake pans. Crumb cookies and flour in blender or food processor. Set aside in bowl. Grind sugar and chocolate chips together until pulverized. Set aside in separate bowl. In separate bowl cream butter with sugar and chocolate mixture until fluffy. Add egg yolks one at a time beating well after each addition. Beat in flour and cookie crumb mixture into batter. Set aside. In a clean bowl with clean beaters, beat remaining egg whites until stiff. Gently fold egg whites into batter until well blended. Pour in prepared pan. Bake for 40 to 45 minutes until toothpick inserted comes out clean. |
