TAHITIAN CHICKEN 
Vegetable cooking spray
1/4 c. butter, melted
1/4 c. all-purpose flour
1/4 tsp. salt
1 (2 1/2 - 3 lb.) broiler-fryer, cut up and skinned
1 (6 oz.) can frozen orange juice concentrate, thawed and undiluted
1/4 c. soy sauce
2 tbsp. butter
1/2 tsp. ground ginger

Coat a 13x9x2 inch baking dish with cooking spray. Pour melted butter into dish, spreading evenly.

Combine flour and salt; dredge chicken in flour mixture and place in baking dish. Cover and bake at 350 degrees for 30 minutes.

Combine remaining ingredients in a medium saucepan; cook over medium heat, stirring constantly until butter melts and mixture is blended. Spoon glaze over chicken. Bake, uncovered, an additional 30 minutes, basting occasionally.
