FAMILY FAVORITE ENCHILADA PIE 
1 pkg. enchilada mix (Lawry's is great)
1 sm. can tomato sauce
1 can corn kernels (opt.)
1 sm. jar pimento (opt.)
1 sm. can chopped olives (opt.)
1 c. shredded cheese (cheddar &/or Mozzarella)
6 to 8 flour &/or corn tortillas
1 lb. hamburger
1 sm. can mild jalapeno peppers (opt.)

Follow directions for Lawry's sauce (20 minutes). Brown hamburger, drain. In large bowl mix hamburger, corn, pimento, olives, (most of) cheese, peppers. Lay a thin layer of vegetable or olive oil in a large casserole (2 quart).

Layer flat: 2 to 4 tortillas, mixture, 2 to 3 ladles of sauce, repeat. Finish top layer with tortilla and remaining sauce. Sprinkle top with some cheese. Add a few whole olives and pimento on top for color. Bake for 20 minutes at 350 degrees. Cool about 10 minutes before cutting before serving. Serves 8 to 10.
