JAMBALAYA 
2 tbsp. salad oil
1 c. chopped green pepper
1 c. cooked, diced chicken
1 c. diced ham
2 1/2 c. peeled, cubed tomatoes
1 c. uncooked rice
1/2 tsp. salt
1 lg. onion, chopped
2 cloves garlic, chopped
1 c. sliced, smoked sausage
2 1/2 c. chicken broth
1 tbsp. chopped parsley
1/2 tsp. Tabasco

Heat oil in large saucepan. Saute onion, green peppers, and garlic until tender. Add chicken, ham and sausage. Cook 5 minutes. Add remaining ingredients; mix well. Bring to boil, cover and reduce heat. Cook 20 to 25 minutes until liquid is absorbed and rice is done.
