LEMON PUDDING ROLL | |
3 extra lg. eggs 1 c. sugar 1/4 c. cold water 1 tsp. vanilla 1 c. flour 2 tsp. baking powder 1/2 tsp. salt 1 lemon pudding mix Mix dry ingredients together. Beat eggs on high for 5 minutes. Gradually add sugar. Beat until light and fluffy. Add water and vanilla, mix well. Blend dry ingredients into egg mixture using low speed. Pour into greased jelly roll pan. Bake for 12-15 minutes at 375 degrees. Turn out of pan immediately into a towel sprinkled with powdered sugar. Roll and cool. Prepare pudding according to package directions. Unroll cooled cake and spread with pudding. Roll carefully. Chill until ready to serve. Strawberry Cream Filling: 1 cup whipping cream whipped with 1/2 cup powdered sugar. Add 1 cup sliced fresh strawberries. |
