LIVELY-LEMON ROLL-UPS 
8 fish fillets, (2 lbs.) fresh or frozen (thawed)
1 c. cooked rice
1/3 c. butter
1/3 c. lemon juice (concentrate)
1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained
2 tsp. salt
1 c. shredded sharp Cheddar cheese
1/4 tsp. pepper
Paprika

Preheat oven to 375 degrees. In small saucepan, melt butter; stir in lemon juice, salt and pepper.

In medium bowl combine rice, broccoli, cheese and 1/4 cup lemon juice mixture; mix well.

Divide broccoli mixture equally among fillets. Roll up and place seam side down in shallow baking dish. Pour remaining sauce over roll-ups. Bake 25 minutes or until fish flakes with fork. Spoon sauce over individual servings. Garnish with paprika.
