ORIENTAL CHICKEN SALAD 
2 chicken breasts, cooked and boned
1 lb. fresh snow peas
1 c. chopped water chestnuts
3 scallions, sliced thin
1/2 c. mayonnaise
2 tsp. soy sauce
1 tsp. lemon juice

Chop chicken into cubes and add snow peas and scallions. Blend together the mayonnaise, soy sauce and lemon juice. Pour over chicken mixture and toss. Chill thoroughly. 4 servings.
