ORIENTAL CHICKEN SALAD 
4 c. cooked, cubed chicken
1 c. bean sprouts
1 c. sliced water chestnuts
1/4 c. chopped green onions
1/4 c. chopped celery
1/4 c. sliced carrots
3/4 c. mayonnaise
1 tbsp. soy sauce
1 tbsp. lemon juice
1/4 tsp. ginger
1 c. chow mein noodles
6 c. fresh spinach
6 c. lettuce, torn

Combine 6 first ingredients. Toss. Combine mayonnaise, soy sauce, lemon juice, and ginger. Whisk until thoroughly mixed. Place spinach and lettuce in salad bowl. Place vegetable-chicken mixture on top. Pour dressing over and toss. Top with chow mein noodles.
