ZUCCHINI BREAD | |
2 c. flour 2 tsp. baking soda 1/4 tsp. baking powder 3 tsp. cinnamon 3 eggs 2 c. grated zucchini squash 1 tsp. salt 2 tsp. vanilla 1 c. vegetable oil 1 1/2 c. sugar 1 c. chopped nuts 1 c. raisins Sift together flour, salt, baking powder, baking soda, and cinnamon. Combine eggs, oil, sugar, zucchini, and vanilla in large bowl. Beat well. Stir in flour mixture and mix well. Stir in raisins and nuts. Pour into 9 x 5 loaf pan. Bake in 350 degree oven for 50-60 minutes or until toothpick inserted in middle comes out clean. Cool on pan or wire rack. This bread freezes well. |
