RICHARD'S MUSHROOMS 
2 1/2 sticks real butter
4 lb. fresh mushrooms, washed
1 whole onion, diced
1 bottle red Lambrusco wine
12 oz. soy sauce
1 tbsp. minced garlic

Melt butter in nice-size pan and add mushrooms and onions. Simmer until mushrooms start to get soft, stirring occasionally. Then add 3/4 bottle of wine. Add soy sauce and minced garlic. Stir and simmer 30-40 minutes, stirring frequently.

Use last 1/4 bottle of wine to drink while stirring the last 30-40 minutes. Then enjoy. Serves 8-10.
