DIABETIC - LEMON CHICKEN 
1/3 c. lemon juice
1/4 c. reduced sodium soy sauce
1 clove garlic, minced
1/2 tsp. salt
1/2 tsp. ginger
1/4 tsp. pepper
2 lbs. skinless chicken breasts

Mix all ingredients together. Pour over chicken and set in refrigerator for 2 to 3 hours, turning chicken once. Drain and discard marinade. Transfer chicken to shallow roasting pan rack coated with cooking spray. Bake at 325 degrees for 1 hour.
