QUICK AND EASY CHICKEN ROLLS 
4 chicken breast halves (2 breasts, split and skinned)
2 oz. Mozzarella cheese, sliced
1/4 c. Italian salad dressing
1/4 c. Italian-seasoned bread crumbs
4 tsp. Parmesan cheese

Preheat oven to 425 degrees. Cut whole chicken breasts to make 4 breast halves. Cover with Saran Wrap and flatten with a meat pounder 2 x 4 or golf shoes.

In each chicken piece, place a couple slices of cheese, roll up and secure with toothpicks.

Dip rolls in salad dressing, then in bread crumb-Parmesan cheese mixture.

Place in greased pie plate or other baking dish and bake uncovered 15-20 minutes, until golden.
