PEPPER STEAK WITH RICE 
1 1/2 lb. lean beef round steak 1/2 inch thick, cut into thin strips
1 tbsp. paprika
2 cloves garlic, crushed
2 tbsp. butter
1 c. green onion with tops, sliced
2 green peppers, cut into strips
2 lg. fresh tomatoes, diced
1 c. beef broth
1/4 c. water
2 tbsp. cornstarch
2 tbsp. soy sauce
3 c. cooked steamed rice

Sprinkle steak with paprika and allow to stand while cutting and preparing other ingredients. Cook steak and garlic in butter until meat is browned. Add onions and green peppers. Continue cooking until vegetables are wilted. Add tomatoes and broth. Cover; let simmer 15 minutes.

Blend water with cornstarch and soy sauce. Stir into steak and vegetables. Cook until thickened. Serve over finely steamed rice.

I prepared this for my husband and he loved it. I had lost my recipe which was exactly the same as this one, so I was really happy when I found it on this site. My kids who are all grown now really liked it when I prepared it for them years ago.
