WALNUT CREAM CAKES 
1 recipe Toasted Walnut Filling
1/2 c. cream, whipped
12 lg. cup cakes

Combine filling and cream. Cut thin slice from top of each cup cake, hollow out center and fill with cream mixture. Replace top. Frost, if desired.

TOASTED WALNUT FILLING:

1/4 c. brown sugar, firmly packed
3 tbsp. butter
1 tsp. water
1 egg yolk, slightly beaten
1/3 c. walnut meats, slightly broken & toasted

Combine sugar, butter, water and egg yolk in top of double boiler. Place over rapidly boiling water and cook until mixture is slightly thickened, stirring constantly. Add nuts. Cool; fill cakes.
