BROCCOLI AND RICE CASSEROLE 
1 c. cooked rice
1/2 c. celery
1/2 c. onion
1/2 stick butter
1/2 c. bell pepper
Almonds
1 c. broccoli, cooked
1 can cream of mushroom soup
1/2 jar Cheez Whiz OR
1/4 lb. Velveeta cheese

Combine butter, celery, onions and bell pepper together and simmer until tender. Mash broccoli like mashed potatoes. Add mashed broccoli to first mixture, then add cheese and soup. Mix with the rice. Pour in casserole dish and top with almonds. Cook for about 15 or more minutes, until almonds are toasty.
